Phd Student: Sara Chiapparini

I’m Sara Chiapparini and I graduated in December 2015 in Animal Husbandry Sciences and Technologies. The title of my thesis was: ”Several litter management systems to assess the swine welfare in the fattening period”. I have done a training period in the feed laboratory of analysis of the Department of Health, Animal Science and food Safety (VESPA) at the University of Milan where I had the opportunity to learn lab methods related to food and feed nutritional characteristics, meat oxidative stability (i.e. TBARS method). In the lab I have also acquired skills related to chemical and physical analysis on meat and derived products. Moreover, I have evaluated the KRL value of blood and antioxidant activity of natural extracts, with the applicant of the biological test KRL. During this period, I had the opportunity to show my competence in the data collection, drafting and interpretation of the results and I had good ability to work in team. Now I have just begun a Phd course and I want to improve my knowledge on dietary supplementation in food producing animals for the improvement of welfare and meat quality.

Director of the Graduate School of Animal Nutrition and Husbandry, University of Milan, Molise and Bari (1991-2001). Chief of Institute of Animal Nutrition (University of Milan) (2001-2004). President of the University degree on Animal Science (1999-2005). Coordinator of a first level master on “Pig Sciences” (2003-2005). Director of the post graduate Specialization School in Swine Pathology (2010-2016). Membership of professional bodies: ASAS – American Society of Animal Science, ASPA – Italian Association of Animal Production, SISVET – Italian Society of Veterinary Sciences, SIPAS – Italian Pig Veterinary Society. Key qualifications: Pig nutrition and feeding, Nutraceuticals in monogastric nutrition, Immunonutrition, Nutrition and meat quality



Improvement of animal health and products quality through dietary manipulation.

My project is now focused on animal nutrition which is a good mean to enhance animal health and products quality. In the recent years, research has focused the attention on the use of substances which are able to improve both animal health and meat quality. Actually, the general trend toward the reduction of synthetic substances has increased the interest studying natural molecules such as plant extracts which are rich in bioactive compounds like polyphenols with different kind of activities such as: antioxidant, antimicrobial, anti inflammatory and immune modulatory. Moreover, the ban in 2006 of the use of antibiotics growth promoters in feed, the European Union (EU) has increased interest towards plant additives. It is also important to  identify new strategies to satisfy the increasing demand for antibiotic free products.

Farm animals in intensive farming system are exposed to oxidative stress, which is induced by several factors such as: nutritional, environmental, physiological, density and also many diseases connected to oxidative stress.

The aim of my project is to evaluate the effects of dietary supplementation with natural extracts in food producing animals on welfare and quality parameters of meat for fresh consumption and derived product. Several active principles will be studied in in vivo trials in order to evaluate their activities. The growth performance and the KRL value, which is a new tool to determine the antioxidant status of an organism, and hematochemical parameters will be also evaluated. Moreover, nutritional, technological, sensory quality and oxidative stability (TBARS) of animals product will be assessed.  The results of this project will allow to deep the knowledge regarding natural extracts supplementation in animal nutrition and its promising future application in order to enhance performance and products quality.
