PhD Student: Maria Elena Marescotti
Maria Elena Marescotti graduated with the highest honors in Agricultural Science at the University of Milan in July 2012 discussing a master thesis about the effect of parity on immunoglobulin concentrations in bovine plasma and milk.
After the graduation and the professional license acquisition, she spent a few month in Australia where, through the WWOOF (Willing Workers On Organic Farm) program, she could work in 3 different type of farm.
In 2013, she started a research fellowship at the Department of Health, Animal Science and Food Safety of the University of Milan, where she acquired further skills in agriculture economics and policy, rural appraisal, sustainability assessment and questionnaire-based surveys.
From October 2015, she is a PhD student in the Division of Economy and Management. Her research activities focus on rural development strategies and agri-food supply chain.

Tutor: Anna A. M. Gaviglio, Associate Professor, PhD, Milan
Anna A. M. Gaviglio, Agronomist, graduated in Agricultural Science in 1995 at University of Milan. She completed a PhD program in Zooeconomics in 1999 at the University of Bologna. In 2002, she became researcher in the AGR/01 scientific sector – Agricultural Economics and Rural Appraisal - at the University of Milan.
Since 2015, she is Associate Professor of Agricultural Economics, Agricultural Economics and Policy, Economics and Management, and Marketing at the Department of Health, Animal Science and Food Safety, University of Milan.
The main themes of her latest research activity are: organic productions management and marketing, consumers preferences, fisheries and agricultural biodiversity policy, decision support policies, economic analysis of the sustainability of integrated supply chain for the production of energy, assessment of the economic, environmental and social sustainability of the agricultural sector.

Research Project:
Development of a support framework for the creation of partnership between stakeholders: the wild game meat supply chain

In the European literature, the Short Food Supply Chains (SFSCs) have been widely discussed as a new rural development tool and an opportunity to revitalize rural areas. These supply chains can re-build a connection between consumers and territory, enhancing the image of the farms and/or region as a source of high quality foods.

The aim of the research is to develop a support framework to facilitate the creation of partnership among stakeholders able to be repeatable even in different agri-food sectors. The framework will be developed and then applied to a case study in the wild game meat supply chain.
The method could be useful for primary stakeholders (hunters, meat producers and local institutions) and it could significantly contribute to the international scientific community by proposing an innovative food supply chain management.

The research is structured as follows:

Phase 1 – Definition of the case study and supply chain analysis

After the definition of the case study area, the aim of the first phase is to describe the supply chain and the flow-sheet of fresh wild game meat and, finally, to identify public and private stakeholders involved in each step.

Phase 2 - Market analysis
The objective of this phase is to make an economic analysis of the wild game meat processing supply chain. This includes: analysis and description of cost and revenue sources of each step of the supply chain; description of legislative context of reference; carrying out a set of questionnaires for the involved stakeholders for the systematic collection of cost and revenue data and finally a synthetic data processing.

Phase 3 - Identification of critical intervention points
The last phase of the project is closely related to both parts 1 and 2 and it includes a review of the supply chain with the elaboration of a summary overview that identifies the intervention points related to each stakeholder.
