NobileMaria Nobile graduated in Clinical, Forensic and Sport Chemistry Master’s Degree at the University of Turin in December 2013 with the evaluation of 110/110 with the highest honours. She is author of the thesis “Determination of endogenous and exogenous corticosteroids in bovine urine and effect of combat stress on their biosynthesis”. During her thesis internship she worked at the Centro Regionale Antidoping e di Tossicologia del Piemonte in collaboration with the Istituto Zooprofilattico del Piemonte, Liguria e Valle d'Aosta. She is co-author of the scientific paper " Detection of boldenone, its conjugates and androstadienedione, as well as five corticosteroids in bovine bile through a unique immunoaffinity column clean-up and two validated liquid chromatography–tandem mass spectrometry analyses”published in 2014 on Analytica Chimica Acta.

ChiesaLuca Chiesa is Assistant Professor in Food Inspection at the Department of Veterinary Science and Public Health of the Faculty of Veterinary Medicine of the University of Milan, Italy.

His research activity has mainly involved the following areas: development of analytical methods for identifying molecules having a potential impact on foods of animal origin; study of chemical indicators for testing compliance of meat as a product and study of the volatile fraction in meat products; Measurement of chemical rancidness indicators in meat and dairy products; Identification of fungal metabolites in salami and cold pork meats (Ochratoxin A); Identifying additives that are not admitted in foods of animal origin: carbon monoxide in tuna fish; Study on hygiene of meat and meat products, milk and dairy products; Study of chemical indicators for testing irradiation of bovine meat; Identification of packaging residues; Identification of residues in bovine urine; Study of fresh and processed meat with a focus on biochemical issues, processing techniques and quality, health and safety characteristics. More specifically, he has developed a considerable expertise in the study of lipids and oxidative phenomena affecting the lipid fraction of fresh meat and meat products. Characterization of milk and derivative products, especially the aromatic fraction, and oxidative phenomena.

Research project

Development and validation of methods for the detection of residues in unconventional and innovative matrices through LC-MS/MS analyses for safety of food of animal origin.

Regulations on substance residues with anabolic activity in animal matrices and food of animal origin is essential to safeguard animal welfare, to avoid consumer health risks derived from the exposure and to ascertain commercial frauds. The research project aims to detect corticosteroids, boldenone and its metabolites, androgens , estrogens and antibiotics.

Nobile Chiesa 01The use of urine as a matrix for the control of illegal treatment, even if widely accepted is not, however, entirely satisfactory. It is therefore necessary to develop methods in order to verify in innovative unconventional matrices the presence of these active principles, which administered at low doses cause little clinical and pathological changes and whose residues are barely detectable in biological fluids to define abuse. In particular, the main provided actions are: survey on the production chain; collection of samples for the identification of the presence of the compounds mentioned above. The analytes in the different matrices may require a different approach for sample pretreatment, extraction, clean up and fractionation before the separation with liquid chromatography–tandem mass spectrometry analyses. Validation of the optimized methods will be done according to Commission Decision 2002/657/EC. For each analyte, the method performance will be assessed through its qualitative parameters, such as the analyte specificity, molecular identification in terms of retention time (RT) and transition ion ratios, through its quantitative parameters, such as the linearity, recovery, accuracy in term of trueness and of precision expressed as the intra and inter-day repeatability, and through the analytical limits [decision limit (CCα) and detection capability (CCβ)].
